Description: What began at age 13 as a young pursuit of craftsmanship and self-reliance — using a campfire and a hair dryer to forge steel in the Georgia heat — has evolved into a passion-driven business for knifemaker Zach Rhymer. His first knife, forged from rebar on a simple cast iron anvil, marked the start of a journey that would grow alongside his skill and equipment. The chef’s knife is a multipurpose knife used for just about every cutting job in the kitchen. Whether chopping, slicing, dicing, or mincing, this will be your goto knife. There's plenty belly curve to enable rocking cuts, which enhances the knife's versatility. This chef’s knife is sure to be a kitchen favorite.
The blade is hand ground Nitro-V stainless steel. Nitro-V is a martensitic stainless steel with a chromium-based composition created by the New Jersey Steel Baron company. Nitrogen and vanadium have been added to the composition of AEB-L to improve edge performance. The resulting blade has an extremely keen, long-lasting edge and is just as tough or tougher than similar carbon steels while being completely stainless.
The style of grind Zach is using has the thickest part at the center of the blade, and is convexed at both the spine and edge. This provides lots of food release without sacrificing strength. The blade is beautifully thin for effortless slicing. The spine and choil are nicely rounded for comfort. Rhymer's touchmark is on the right side of the blade.
The handle is ebony, faceted by hand to provide a comfortable grip. Ebony is a dense, nearly jet black wood that holds up beautifully to the demands of either a homer or commercial kitchen. A light toned box elder burl spacer adds a contrast to the jet black wood. A polished stainless steel spacer adds a nice transition between these two materials. The front of the handle is sealed with a polished stainless steel bolster. Like other knives, this knife should not be put in the dishwasher.
A custom Rhymer zipper case is included to store the knife safely.
