When combined with his high level blacksmith skills, he is able to create incredible knives that are highly desirable worldwide. Over the last several years, David has been creating some of the best chef's knives to be found anywhere.
This chef's knife is sure to become your go-to knife in the kitchen. A chef's knife is the general purpose knife in the kitchen. From slicing tomatoes to chopping onions, this knife will get the task done perfectly. This 9-3/4 inch chef's knife is perfect for larger tasks from preparing large meals to cutting items such as melons.
The blade is forged from David's own mosaic damascus, combining 1080 and 15N20 carbon steels to ensure excellent edge holding and chip resistance. The blade features an S-Grind. A convex ground edge provides high performance chopping with lots of strength. From there, it moves into a hollow as the blade moves toward the spine. This technique lightens the overall weight without sacrificing strength. The combination ensures a high performing workhorse with less resistance cutting through foods that would otherwise stick or wedge. Both the spine and choil are nicely rounded for comfort. D. Lisch MS is engraved on the left side of the blade. We recommend using camellia oil to protect the blade from rust and oxidation.
The bolster is integral to the blade with the damascus pattern flowing uninterrupted. Creating an integral bolster in a custom setting requires a particularly talented smith.
The handle is premium sambar stag, heirloom fit to the integral bolster. A wrought iron pommel was fit perfectly to the stag and hand fileworked to perfectly match the antler’s natural texture. The wrought iron pommel is combined with gold using reticulation and depletion gilding techniques. Like other knives, this knife should not be put in the dishwasher.
