Description: Martin Huber hails from Austria and is considered one of the greatest chef knife makers from that region. His father, mother, and grandfather all had blacksmithing and metalworking experience which led to Martin learning the trade at a young age. Martin took four years of formal blacksmith instruction in his hometown of Steyr, Austria before opening up his own workshop in 2016. Martin's kitchen knives have well thought out designs and efficient cutting geometry.
The santoku is the traditional Japanese chefs knife. This comfortable design is a fantastic multipurpose chopper. The santoku style has quickly become the new favorite for chefs in the West. The 7-1/4 inch blade is easily controlled, while the tall blade gives plenty of finger clearance over a cutting board. From chopping to slicing and dicing, this will be your go-to knife.
The 7-1/4 inch blade is hand forged from Martin's own san mai – a 25 layer damascus core (combining O2 and 15N20 carbon steels) is surrounded by springsteel. This combination ensures exceptional edge holding with a dramatic package. The top of the blade features a forge finish, which helps with food release. At 2-1/4 inches tall, this knife has lots of clearance over a cutting board and will last many sharpenings. The spine and choil are nicely rounded for comfort. We recommend using camellia oil to protect the blade and natural wood handle.
The ambidextrous Japanese-inspired handle is a style called a half-octagonal. The faceted top is matched with a rounded base for comfort. The handle combines poplar burl wood with an ancient bog oak bolster. Bog oak is a wood that has been buried in a bog for hundreds or sometimes thousands of years. The extremely low oxygen conditions of the bog protect the wood from normal decay, while the underlying peat provides acidic conditions where iron salts and other minerals react with tannins in the wood, gradually giving it a distinct dark brown to almost black color. The combination of materials creates a dramatic handle that will hold up well even under professional use. Like other knives, this knife should not be put in the dishwasher.
An edge guard is included to protect the edge when the knife is not in use.
