This custom chef’s knife was made in collaboration by Greyson Walker and Chloe Kim of Acre Forge.
The nakiri is a multipurpose knife. It is a traditional Japanese chef’s knife ideal for chopping and slicing. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to meat cleavers. Nakiri make fast, accurate work of thin slicing and chopping. This nakiri is particularly tall, giving it a nice combination of nimbleness and lots of knuckle clearance over the cutting board.
The blade is forged from san mai combining a 52100 core with mild steel cladding. 52100 is considered by many knifemakers and knife users to be among the best steels (if not the best!) used in modern knifemaking. It combines exceptional edge holding with durability and ease of sharpening. The spine and choil are nicely rounded for comfort. Chloe's touchmark is on the left side of the blade. Greyson's touchmark is on the right side. We recommend using camellia oil to oil the blade and natural wood handle.
The handle is based off the Japanese ambidextrous octagonal handle. It combines dyed and stabilized maple with a black G-10 bolster. A raffir spacer adds a nice contrast between the dyed wood and G-10 bolster. The front and rear of the handle are sealed with green G-10. Like other knives, this knife should not be put in the dishwasher.
