Description: This exceptional Upswept Boning/Fillet Knife is the work of Argentinian knifemaker Pablo Untroib. Pablo lives in Buenos Aires. He specializes in knives for professional and amateur cooks as well as making outdoor knives.
The Upswept Boning/Fillet Knife is the perfect companion whether filleting some freshly caught fish, slicing up rib cutlets into steaks, or even deboning a chicken or pork. The blade is still tall enough to be able to be used over a cutting board for general tasks or slicing meat against a fork. This is a must-have knife for any serious kitchen!
The blade is O2 carbon steel. At Hrc 60, it will have a keen, long lasting edge. An elegant forced patina provides limited rust resistance and helps you get comfortable working with carbon steels. Because this knife is made from carbon steel, we recommend camellia oil to avoid rust and oxidation.
South American Lapacho (Tabebuia ipe) wood handle scales are set on the full tang for strength and durability. They are seated with three hidden bolt rivets. Lapacho, a Paraguayan Ipe, is an incredibly durable wood. Its dense cell structure serves as a natural deterrent to insects, decay, and molds. Because of this natural resilience Lapacho is a tremendous choice for a chef's knife handle. More than just durable, Lapacho is also very pleasing to the eye, showing off warm brown tones with a nice figure. The domed handle is nicely contoured so that it fits most hands.
The knife is accompanied by a leather sheath. This well-balanced fillet/boning knife can be used for hours without fatigue. It is a perfect choice for both home and commercial chefs - as well as fisherman.
