Description: Based out of Peckham, South London; Blenheim Forge is the steel workshop of bladesmiths Jon Warshawsky, James Ross-Harris, and Richard Warner. Together, they create hand-forged, high quality kitchen knives that will be equally appreciated by the avid at-home cook or the professional kitchen. Their understanding of kitchen knives and efficient cutting geometry is excellent!
Longer and slimmer than the santoku, the gyuto is an exceptional general purpose chef's knife. It is perfect for slicing meats and proteins as well as chopping, mincing, and dicing. Whether slicing onions, chopping vegetables, or portioning meats, this will be your go-to knife.
The blade is hand forged Aogami Super with stainless cladding. Aogami Super is highly prized in Japan and provides exceptional edge holding. A forge finish along the top of the blade helps facilitate food release when cutting foods. The blade edge geometry is very thin and will cut foods efficiently with little resistance. The non-reactive cladding makes this knife easier to care for.
The Japanese-inspired octagonal handle is fumed oak. A brass ferrule seals the front of the handle from food and water. The handle is extremely comfortable and accommodates a pinch grip well. Like other knives, this knife should not be put in the dishwasher.
Excellent work throughout!
