Like a chef's knife, the nakiri is a multipurpose knife. It is a traditional Japanese knife ideal for chopping fruits and vegetables. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to meat cleavers. Nakiri make fast, accurate work of thin slicing and chopping.
The blade is hand forged Aogami Super with damascus cladding. Aogami Super is highly prized in Japan and provides exceptional edge holding. A forge finish along the top of the blade helps facilitate food release when cutting foods. The blade edge geometry is very thin and will cut foods efficiently with little resistance.
The Japanese-inspired octagonal handle is English walnut. A copper ferrule seals the front of the handle from food and water. The handle is extremely comfortable and accommodates a pinch grip well. Like other knives, this knife should not be put in the dishwasher.
