Description: This chef's knife was made by Gabriel Mabry (Doberman Forge) of Albemarle, North Carolina. Gabriel has a wide variety of skills from his background as a USMC marine, professional chef, restaurant owner, and certified welder. He uses these skills to make knives that will serve their owners for a lifetime just like his loyal family pet that his forge is named after! Gabriel became a Forged in Fire champion in the September 15, 2017 episode of the acclaimed TV series!
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for chopping vegetables and slicing meats. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board. At 8-1/3 inches, this is among the most popular sizes for a primary chef's knife. It is large enough to get most any task done, yet short enough to do it with ease.
The blade is hand ground CPM-MagnaCut with a satin finish. CPM-MagnaCut is a new premium stainless steel created by Crucible with the help of professional metallurgist Dr. Larrin Thomas. MagnaCut combines the high toughness of CPM-4V with the corrosion resistance of CPM-20CV. This creates a perfect blade steel option for knives that need high toughness and great edge retention while still being easy to maintain. The corners of the spine and choil have been rounded to eliminate hot spots.
Desert ironwood (Olneya tesota) handle scales are secured to the full tang using bronze pins. Ironwood is a rare wood that is only found in the valleys of the Sonoran Desert below 2,500 foot elevation. It is among the most desirable of exotic woods used for knives. The contoured handle is equally comfortable in a pinch grip and when held further back. Like other knives, this knife should not be put in the dishwasher.
