Description: Mark Mostert is an exceptional bladesmtih from South Africa. He started making knives part time in 2019 and presented his work for the first time at the 2020 Brooklyn Knife Show in Pretoria, South Africa. From the start, damascus caught his eye and he began a never-ending quest for information surrounding damascus and forging. As time went by, he started experimenting and is one of a very small group of bladesmiths in the world capable of making copper san mai. Mostert brings skills that are far beyond the number of years that he has been forging. His work is currently significantly underpriced and I anticipate him gaining a significant international reputation.
The blade on this large, yet nimble chef's knife is 9-1/2 inches long and almost 2-2/3 inches long ensuring plenty of height over the cutting board and a longer blade life. The blade incorporates four separate bars of damascus, creating a complex pattern that is extremely engaging. By using 80CrV2 and 15N20 carbon steels, Mostert ensures excellent edge holding and chip resistance. The spine and choil are nicely rounded for comfort. We recommend using camellia oil to oil the blade and natural wood handle.
The bolster is integral to the blade, with the damascus pattern flowing uninterrupted. Creating an integral bolster in a custom setting requires a particularly talented smith.
The handle is bog oak. This rare wood was buried in a Ukrainian peat bog for hundreds or sometimes thousands of years. The extremely low oxygen conditions of the bog protect the wood from normal decay, while the underlying peat provides acidic conditions where iron salts and other minerals react with tannins in the wood, gradually giving it a distinct dark brown color. The handle is large enough to fit any size hand. It is comfortable either in a handle-grip or a pinch grip. This is a knife you won't want to put down! It is sure to become a kitchen favorite.
