This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The 8 inch blade is well suited to slicing vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. A convex grind encourages food release. Whether chopping fruits and vegetables or slicing meats, this chef's knife will do it all.
The 8 inch blade is drop forged from a single billet of 52100 carbon steel. A cryogenic differential heat treatment brings the resilient steel to 65 Hrc. 52100 is considered by many knifemakers and knife users to be among the best steels (if not the best!) used in modern knifemaking. It combines exceptional edge holding with durability and ease of sharpening. A temper line travels across the blade, showing the transition between the supportive spine and the ultra-hard (Hrc 65!) cutting edge. The blade features a smooth, dark patina, offering limited rust resistance. Like other carbon steel knives, we recommend camellia oil to avoid rust and oxidation. The sheepsfoot tip combines durability with precision. At 2 inches tall, the blade allows for plenty of finger clearance when chopping over a cutting board. The blade culminates in an integral bolster for superior strength and balance.
The faceted handle is Oregon bigleaf maple burl (Acer macrophyllum). It is set between the integral bolster and integral end cap. By using stabilized wood, STEELPORT ensures this knife will hold up well to the demands of either a home or commercial kitchen. The integral bolster provides a smooth transition to the rounded spine for an effortless pinch grip. The handle is comfortable in a wide range of grips.
This knife is slightly heavier than a typical Japanese knife, though extremely nimble. The convex ground blade has a smooth cutting feel with good food release.
