Description: Longer than the santoku, the kiritsuke gyuto is the essential kitchen knife and is used for all-around food preparation. The kiritsuke gyuto has less curve than a gyuto, which means it contacts the cutting board along more of its length, so more food is cut per slice and it needs to be lifted less, making cutting more efficient. The arc of the blade edge is perfect for a rocking chop. The slim profile keeps the weight low and the balance just right. Francisco Vaz lives in Rio Grande, Brazil. He has been making knives since 2017 and is a master of chef's knives. Each knife that he creates is a handmade, high performance work of art. He grinds all of his knives by hand without the use of jigs and believes heavily in making his knives by hand.
The blade is hand forged CPM-MagnaCut. CPM-MagnaCut is a new premium stainless steel created by Crucible with the help of professional metallurgist Dr. Larrin Thomas. MagnaCut combines the high toughness of CPM-4V with the corrosion resistance of CPM-20CV. This creates a perfect blade steel option for knives that need high toughness and great edge retention while still being easy to maintain. The blade features a shinogi grind for effortless food release. The top is forge finished. The grinds are satin finished. Both the spine and choil are nicely rounded.
The octagonal Japanese-inspired "Wa" style handle is ambidextrous. Blackwood FatCarbon is combined with black G-10 spacers. Red mammoth molar forms a dramatic ferrule.
Like other kitchen knives, this knife should not be put in a dishwasher.
