Description: Sam Reed is a craftsman and metalworker living just outside Seattle, WA. He's happiest when he's making beautiful and functional things. Everything he designs and makes is meant to be used.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long blade is perfect for chopping and slicing. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. At 8-1/2 inches, this is among the most popular sizes for a professional and home chef's knife. It is large enough to get most any task done, yet nimble enough to be easily maneuvered.
The blade is flat ground, distal tapered AEB-L stainless steel. AEB-L is ultra high performance -- combining the convenience of stainless steel with the ability to take an acute edge and hold it (a characteristic usually only found in carbon steels). AEB-L steel was designed for razors, which need corrosion resistance, high hardness, and very acute edges. Once you try a knife that is made with AEB-L, you'll immediately understand why it is coveted by knife enthusiasts, knifemakers, and professional chefs. The resulting blade has an extremely keen, long-lasting edge. The blade is beautifully thin for effortless slicing. The spine and choil are nicely rounded for comfort. A hand rubbed satin finish lends a timeless, heirloom quality. Reed's maker mark is on the right side of the blade.
Light toned, stabilized spalted bigleaf maple (Acer macrophyllum) handle scales are set on the tapered full tang using stainless steel pins. The sculpted handle is comfortable in both a pinch grip and a full handle grip. The stabilized wood will hold up well to the demands of either a home or commercial kitchen. Like other knives, this knife should not go in the dishwasher.
Excellent work throughout! This nimble chef's knife is sure to become a kitchen favorite!
