Description: Jessica Burke is the 23 year old (as of the spring of 2021) daughter of Mastersmith Bill Burke. In the last few years, Jessica has been making knives under the watchful supervision of Bill. The results have been absolutely amazing!
This 7-1/8" chef's knife is an all-purpose tool ideal for a wide variety of cutting tasks—slicing, dicing, and chopping small to medium-sized fruits, vegetables, and other foods. With its curved belly, this chef's knife can also be gently "rocked" through fresh herbs or spices to produce a very fine mince. Whether slicing, dicing, or chopping, this knife will be a great choice.
The elegant blade was forged from 52100 carbon steel. Many knifemakers and users feel that 52100 is among the best, if not the best steel currently used for knifemaking.
The handle is curly koa and is nicely sculpted for a secure, comfortable grip - swelling at the palm, moving into a slimmer waist, and swelling again at the end of the handle. The stabilized wood will hold up beautifully to hard use, though this knife would feel at home in most any collection. Handle scales are set to the full tang using three small hidden bolt Corby bolts. The bolsters are formed from 416 stainless steel.
This knife has perfect balance and this ensures it is as much of a joy to use as it is to look at!
