Description: The love for gastronomy, quality and construction mixes together in a somewhat magical way to give Stelios Christos Drakopoulos (also known as Dikristo) a life purpose: One of the first 100% Greek handmade chef's knives. This exquisite Dikristo chef's knife was made by Drakopoulos Stelios. A native of Athens Greece, Stelios was born in 1983. He is a home cook, food lover, and knifemaker. We were extremely impressed with this latest batch of knives from him! This chef's knife gets its name, Notus, from the Greek god of the south wind.
The kiritsuke gyuto is modeled after the French pattern chef's knife. Longer and slimmer than the santoku, it is a general purpose chef's knife. The triangular tip results in a detail oriented, yet stronger tip than the gyuto. The long blade is needed for the slicing motion required to cut meats and the tall profile provides plenty of finger clearance over a cutting board. The long, straight spine is perfect for moving foods across a cutting board after chopping. The kiritsuke gyuto is a perfect general purpose chef's knife to grab whether slicing onions, chopping parsley, or dicing meat.
The 9" AEB-L stainless steel blade is meticulously mirror polished. Many knifemakers and metallurgists feel that AEB-L, with its small crystalline size, tremendous edge stability and toughness, is among the best stainless steels used in knifemaking today. AEB-L was developed for razor blades with a very fine grain structure making it easy to sharpen while maintaining good edge holding capabilities. The spine and choil are nicely rounded for comfort.
The Japanese-inspired octagonal handle is stabilized maple burl. This style of handle is extremely comfortable and ambidextrous, allowing both left and right-handed users equal comfort. The front bolster is polished stainless steel.

A custom storage bag with brass buckles and Dikristo's mark is included to safely store the knife.
