This exquisite Dikristo chef's knife was handmade by Drakopoulos Stelios. A native of Athens Greece, Stelios was born in 1983. He is a home cook, food lover, and knifemaker. We were extremely impressed with this latest batch of knives from him! This chef's knife gets its name, Aetna, from the daughter of Uranus and Gaia.
The gyuto is modeled after the French pattern chef's knife. Longer and slimmer than the santoku, it is an exceptional general purpose chef's knife. It is perfect for slicing meats and proteins as well as chopping and dicing. Whether slicing onions, chopping vegetables, or portioning meats, this will be your go-to knife.
The san mai blade features undulating, brightly colored brass, copper and stainless steel sides surrounding a V-Toku2 carbon steel core. V-Toku2 is a 'super-steel' created by Takefu, in Japan. Very high in carbon content (approx. 1.1%), this steel holds and takes an amazing edge. The effect created by the mokume gane sides is extremely captivating! The spine and choil have been nicely rounded for comfort.
The handle is presentation grade maple burl. This beautiful stabilized wood has a swirling grain structure that is pleasing to the eye. The Japanese-inspired octagonal handle offers a comfortable, ambidextrous grip. The handle is finished with bolster made from copper flakes cast in resin. This knife is sure to become a favorite in your kitchen!
A custom storage bag with brass buckles and Dikristo's mark is included to safely store the knife.
