Description: Brian Hanson is a bladesmith located in Washington State. He worked for over a decade as a fine dining chef in various Seattle restaurants, but during Covid he made the decision to change careers and start working as a bladesmith. He now makes high performance kitchen knives that he hopes fellow chefs will love to use both at home and professionally in the kitchen.
The nakiri chef's knife is a traditional Japanese knife ideal for chopping and slicing fruits and vegetables, as well as boneless meats. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to meat cleavers. The nakiri chef's knife is a tremendously versatile kitchen tool. Whether slicing onions or julienning carrots, once you try a nakiri, you'll wonder what you ever did without it.
The hand forged 6 bar damascus blade combines 1084 and 15n20 carbon steels to provide a high performance, long lasting edge. The alternating twist damascus bars combine to create an extremely engaging pattern. The blade is ground exceptionally thin creating a high performance, extremely lightweight knife. Brian's maker mark is on the right side of the blade. Because this knife is forged from carbon steels we recommend using camellia oil to avoid rust and oxidation.
The ambidextrous Japanese-inspired octagonal handle is dyed curly maple. The chatoyancy of this piece of wood is particularly beautiful. The handle is finished with a stainless steel spacer and buffalo horn ferrule. Like other knives, this knife should not be put in the dishwasher.
