Description: I was introduced to Carlos Curtolo by renowned Brazilian knifemaker Ricardo Vilar. Carlos lives in Araras, Brazil with his wife and two children. Forty-five year old Carlos (born in 1976) grew up with the sound of blades being run on a sharpening stone. His father is an enthusiastic amateur cook, hunter and fisherman, so Carlos developed a taste for good cooking and learned the value of sharp knives. Curtolo began making knives in 2013 and has never looked back. He is currently a part time knifemaker.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long blade is well suited for chopping vegetables and slicing meats. The gentle curve of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. At 8-1/2 inches, this is among the most popular sizes for a professional chef's knife. It is large enough to get most any task done, yet nimble enough to be easily maneuvered. A K-tip provides a strong, detail-oriented tip.
This elegant Japanese-inspired chef's knife is Curtolo's sole authorship work. The blade is high performing AEB-L stainless steel. Many knifemakers and metallurgists feel that AEB-L, with its small crystalline size, tremendous edge stability and toughness, is among the best stainless steels used in knifemaking today. AEB-L was developed for razor blades with a very fine grain structure making it easy to sharpen while maintaining good edge holding capabilities. A shinogi grind provides a very efficient cutting geometry with optimal food release. This workhorse grind provides a strong, high performance cutting edge for effortless, accurate slicing. Curtolo heat treats his blades with a cryogenic treatment to ensure the longest lasting edge. Both the spine and choil are nicely rounded for a comfortable grip.
The ambidextrous faceted handle is formed from dyed and stabilized spalted beech wood. It is set on a full tang for strength and durability. Orange fiber spacers assist the handle to adjust to temperature and humidity changes. Handle scales are set in place with two brass hidden bolt rivets and a mosaic pin. The handle on this chef's knife is a nice size and will be very comfortable for extended use. It is comfortable in both a pinch grip and when held further back on the handle.
Like other knives, it should not be put in the dishwasher. This knife is sure to become your 'goto' knife and a family heirloom.
