Description: Bill Burke, who was honored as a Master Smith June 2008, creates hunting knives and culinary knives. His work is frequently noted as being among the best in the world -- both in his understanding of design and the keen, long lasting edges. His knives are a pleasure to hold and a joy to use.
This high performance damascus chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing and chopping vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. Because this knife is forged from carbon steels, we recommend using camellia oil after use to avoid rust and oxidation.
Burke is well known for his heat treatment, which he developed in conjunction with Mastersmith Ed Fowler. These techniques create some of the sharpest and most long lasting edges found anywhere.
The blade was hand forged to shape from Bill's own damascus. The fine pattern draws your eye for further examination. Burke's mark is engraved on the left side of the knife. The right side is engraved with MS (Master Smith).
The handle is presentation grade buckeye burl. The convoluted wood nicely reflects Burke's damascus pattern. By using stabilized wood, Burke ensures this knife will hold up to the high demands of either a professional or home kitchen. The handle is contoured to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the back. A distal tapered full tang ensures perfect balance and durability. A 416 stainless steel bolster protects the front of the handle from moisture.
