This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for chopping and slicing. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. This knife is sure to become your go-to knife in the kitchen.
The blade was hand forged in a technique known as san mai. A dramatic damascus is forged to the sides of a high performance SG2 PM stainless steel. The bright, swirling pattern created from stainless steel and nickel is offset by the ultra-high performance SG2 core. At 64 Hrc, this knife will have an exceptional, long lasting edge.
The handle is presentation grade spalted buckeye burl. The convoluted wood grain is a nice mix of light and dark tones. By using stabilized wood, Burke ensures this knife will hold up to the high demands of either a professional or home kitchen. It is nicely carved to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the beak. The knife has perfect balance and feels exceptional in the hand.
