Paring knives are one of the essential kitchen knives every cook should have on hand. After a chef's knife, you need a paring knife. It's perfect for any paring task, from hulling strawberries to peeling an apple. It also handles jobs such as chopping small foods, like garlic cloves or ginger, against a cutting board. The 3-1/4 inch blade is the perfect length for most jobs.
The blade is made from antiqued 80CrV2 carbon steel, hardened to 61-62 Hrc. This high performing carbon steel holds a razor sharp edge and remains highly chip resistant. An antiqued finish helps protect the knife from rust. The flat ground blade is distal tapered which lightens the blade and gives it a great balance.
The handle is made from dyed and stabilized box elder burl. Handle scales are secured to the full tang using two bronze pins. The scales are nicely rounded, providing a comfortable, secure grip. Because the wood is stabilized with resin, it will hold up very well to the harsh demands of a professional kitchen. Like other knives, this knife should not be put in the dishwasher.
