Murdock's knives are inspired by faith and family. His maker's mark shows his initials surrounding a stylized person in prayer.
This Petite Chef's Knife is a perfect choice for the cook that prefers a smaller, more easy to control knife. At 4-2/3 inches, the blade is long enough to get most any task done, yet short enough to be a breeze to use. The downturned tip provides plenty of finger clearance.
The blade was hand forged in a technique borrowed from the world of Japanese chef's knives. The san mai blade combines a 52100 carbon steel core with 410 stainless steel sides. A thin nickel spacer between the two steels ensures a particularly dramatic transition. Stainless cladding on the sides makes care a bit easier. Because the core is carbon steel, we recommend using camellia oil to avoid rust. reit a bit easier to care for this knife, though called san maiThe upswept blade is hand forged from 52100 carbon steel. Many knifemakers (including the likes of Bill Burke, Ed Fowler, Bob Kramer, and more) and knife users consider 52100 to be among the best steels used in modern knifemaking. 52100 takes a super-sharp, long lasting edge. It has tremendous resilience and strength. The spine is rounded for comfort.
The handle is contoured from stabilized box elder burl (Acer negundo). This dramatic wood has tremendous figure and is dramatically carved. The guard is made from hand forged cable damascus. An anodized titanium spacer adds nice contrast.
A custom, hand tooled leather roll made by Murdock is included to keep the knife close at hand.
