The Hankotsu, which developed in the Kansai region of Japan (Osaka, Kyoto and their vicinities), is an all-purpose boning knife ideal for French-style hanging butchery and is used for separating meat from bones. It is a strong and sturdy knife, used to cut meat away from the bone, but not a cleaver for cutting through bones. It is ideal for de-boning beef and pork whereas the honesuki is best for poultry and seafood. This Hankotsu is made for right-handed use.
Aaron forged the 6" satin finished blade from 52100 carbon steel. Many makers and collectors feel that this is the best steel available anywhere for use as a knife blade. The blade was then oil quenched multiple times. Many thermal cycles and normalizing steps ensure consistent grain structure. Triple tempering at 400 degrees results in exceptional durability. A cryogenic treatment between temper cycles enhances the edge holding ability.
Presentation grade Arizona desert ironwood (Olneya tesota) handle scales are set on the full tang for strength and durability. The natural wood has warm tones with darker striations. Hand sculpting ensures a superior non-slip grip.
