Description: Bladesmith David Tuthill has been a blacksmith for many years, creating elegant ornamental ironwork. Over the last few years, his attention to detail and skills in the forge have quickly brought him to create truly world-class chef's knives.
Vegetable cleavers are ideal for vegetables, noodles, and boneless meats. The thin edge geometry makes it a precision tool, rather than a replacement for a Western meat cleaver. The tall height is great for moving food from cutting board to the pot and ensures the knife will last many sharpenings.
The 6 inch blade is hand forged 52100 carbon steel. Many knifemakers and knife users consider 52100 to be among the best steels (if not the best!) used in modern knifemaking. It combines exceptional edge holding with durability and ease of sharpening. The forge-textured sides ensure exceptional food release. The thicker spine provides plenty of heft to cut through denser foods. Because it is a carbon steel, we recommend using camellia oil to avoid rust.
The ambidextrous Japanese-inspired handle is a style called half-octagonal. The faceted top is matched with a rounded base for comfort. It combines teak and cherry woods into a dramatic, elegant handle.
