Description: This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing vegetables and meats. The gentle arch of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board. The kiritsuke tip provides a detail-oriented, strong tip. The blade was made from 15N20 carbon steel. This steel provides a keen, long lasting edge with excellent chip resistance. The shinogi grind combines a flat ground primary bevel with a hand hammered dark finished flat. This ensures a precise, clean cut with excellent food release. Both the spine and curved choil are rounded for a comfortable grip.
The ambidextrous handle is made from Arizona desert ironwood (Olneya tesota). The warm brown wood has darker lines moving through the twisted figure. Desert Ironwood is one of the most highly-regarding of all woods in knife-making, with its density, stability, and unique grain patterns. The scales are set to the full tang with copper pins. The handle on this chef's knife is a nice size and will be very comfortable for extended use. It is well contoured with a palm swell.
This knife is made from carbon steel and like other knives, it should not be put in the dishwasher. We recommend using camellia oil to protect the blade from rusting and the handle from drying out. This knife is sure to become your 'goto' knife and a family heirloom.
