This exceptional utility knife is a perfect go-to for slicing produce, meats, and filleting fish. When removing bone from fish, the narrow, sharp, curved blade gets in close to the bone, making it easy to separate meat from bone. It’s perfect for trimming the silverskin from a tenderloin or roast or even making your own cutlets. The narrow blade reduces drag as you cut against the meat, so cutting is fast and easy. When it comes to filleting fish, the blade's length is just long enough to glide through the body of the fish, quickly removing bones and skin. The blade's thin geometry will also make quick work of tomatoes, apples, and many other fruits and vegetables making this Edson a true general purpose knife for a wide range of slicing in the kitchen.
Joe began by creating a bar of san mai damascus steel. Hitachi Shirogami 2 (white steel) is tremendously high performing, with an extremely keen edge. 22 layers of carbon steel damascus surround the white steel core. The top of the blade is forge finished. It is flat ground nice and thin behind the edge, providing great food release and clean slicing.
The handle combines cottonwood burl with reconstituted stone spacers. The combination is extremely engaging! It is contoured for a secure, comfortable pinch grip. The handle is so comfortable, you won't want to put this one down.
