Description: Journeyman Smith Doug Campbell makes an exceptional chef's knife. This one will be a perfect choice to use as the primary choice in the kitchen -- from slicing fruits, meats, and vegetables to chopping garlic and onions, this knife will be a high performance work horse.
The blade was hand forged from 52100 carbon steel. It is nicely distal tapered for optimal balance. A differential heat treatment results in a keen, long lasting edge, with strength and durability for the spine. Many makers and users feel that 52100 carbon steel is among the best, if not the best steel used on knives! Because this knife is carbon steel, we recommend using camellia oil to avoid rust and oxidation. This knife is perfectly balanced and is one that you won't want to put down.
The handle is formed from stabilized curly koa with a buffalo horn ferrule. The handle, which is influenced by Japanese knives is an oval shape with a slight ridge at the bottom right that is equally comfortable for right and left handed users.
