Description: The 19C27 stainless steel blade has been hand satin finished on the grinds and mirror polished on the flats. This accentuates the clean, sleek grind lines. The steel, which is in the same family as 12C27, is tremendously wear resistant and takes on an incredibly, keen, long lasting edge. It is one of those rare steels that's hardened in the popular 60-62 range of hardness and is easily stropped from sort-of dull to scary sharp.
The handle is formed from richly-colored exhibition grade ironwood set on anodized titanium, keeping the knife light and nimble. Red fiber spacers assist the handle to adjust to temperature and humidity changes. The resulting handle has excellent durability -- perfect for use yet ideal for a collection. The blade is well centered and has silky smooth action. Excellent fit and finish throughout.
