Description: Matt Diskin has created an exceptional chef's knife that would be the pride of any chef. The blade is formed in a san mai (three layers). A 52100 carbon steel central core travels through the center of the knife. This steel, popularized by Mastersmith Ed Fowler, has exceptional edge holding. The sides are a soft wrought iron that cushions the hard central core. The wrought iron was recovered from an 1850s era anchor from Alaska. The blade has been meticulously hand satin finished. Bolsters are formed from mosaic Damascus steel. Stabilized maple burl handles will hold up well under use in the a kitchen. They are dovetailed to the bolsters and are attached with decorative pins. Exceptional work throughout.
