Description: Jean Wilke is a young custom knifemaker from Pretoria, South Africa. His knives are exceptionally well designed and tested. His attention to detail is clearly evident in each of his creations. He is currently working with Mastersmiths Kevin and Heather Harvey, travelling back and forth every two weeks, alternating between working at Heavin Forge and home forge, Fire Goby Forge. It is very exciting to see a young maker with such tremendous talent.
The classic Chinese cleaver is the most widely used knife across China. Unlike a European meat cleaver, a Chinese cleaver of this style is crafted for balance and performance akin to a chef's knife rather than a heavy butcher’s cleaver. Prepare to be astounded while this beastly-looking blade finely minces and dices while remaining comfortable to use for an entire kitchen shift. The subtle curvature of the blade edge allows for smooth transitions from dicing to rocking-chopping.
The blade is hand 1070 carbon steel to ensure excellent edge holding and chip resistance. A differential heat treatment separates the ultra-hard cutting edge from a softer, supportive spine. The blade is extremely thin for high performance slicing and dicing. The 3 inch blade gives a ton of clearance over the cutting board. The spine and choil are rounded for comfort. A hole in the blade allows it to be hung on a hook on the wall. Jean's touchmark is on the left side of the blade. We recommend using camellia oil to protect the blade and natural wood handle.
Handle scales are stabilized Hawaiian curly koa set on the full tang using stainless steel pins. The tang is distal tapered to provide an excellent balance. The contoured handle fills your hand and provides a comfortable grip. Black and white formica liners will help the natural wood adjust to humidity and temperature changes in the kitchen. Like other knives, this knife should not be put in the dishwasher.
