Description: The paring knife is a perfect choice for detail tasks - from taking the eyes out of potatoes to removing stems from tomatoes. The short, thin blade combines control and precision.
This custom parer was made by Seattle knifemaker Larson Made (Noah Larson).
The blade is flat ground by hand from AEB-L stainless steel. AEB-L is ultra high performance -- combining the convenience of stainless steel with the ability to take an acute edge and hold it (a characteristic usually only found in carbon steels). AEB-L steel was designed for razors, which need corrosion resistance, high hardness, and very acute edges. Once you try a knife that is made with AEB-L, you'll immediately understand why it is coveted by knife enthusiasts, knifemakers, and professional chefs. The resulting blade has an extremely keen, long-lasting edge. The blade is beautifully thin for effortless slicing. The spine and choil are nicely rounded for comfort.
Wenge handle scales are set on the full tang using briss hidden-bolt rivets. The wood selected combines intermixed chocolate and black figure. The handle is nicely rounded for a secure, comfortable grip. Like other knives, this knife should not be put in the dishwasher. This knife is sure to become a favorite in your kitchen!
