Description: C. Luis Pina, is an exceptional bladesmith and specializes in kitchen knives. He apprenticed under Mastersmith David Lisch. Luis' past career as a chef provides him with an understanding of culinary knives that is rarely found in other bladesmiths.
Luis hand forged this exceptional chef's utility knife. A utility knife is between a chef’s knife and a paring knife, with a narrower and straighter blade. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
Pina began forging this integral utility/slicer beginning with 1080 and 15N20 carbon steels. The fine patterned damascus is immediately captivating and draws attention for closer examination. Because this knife is forged from carbon steels, we recommend camellia oil to avoid rust and oxidation. By forging closely to shape, he ensures optimal grain structure for a keen, long lasting edge. The blade is beautifully thin for clean, perfect cuts.
The bolster is integral to the blade, with the damascus pattern moving seamlessly from bolster to blade. This technique has superior structural integrity and requires a particularly talented smith.
The ambidextrous oval handle is inspired by traditional Japanese knives. The stabilized curly maple wood handle is separated from the integral bolster with alternating black and red G-10 spacers. Like other knives, this knife should not be put in the dishwasher.
