Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, results in edge holding that is far beyond other knives. This is a knife that will astonish you with its high performance and stunning good looks.
The gyuto is modeled after the French pattern chef's knife. Longer and slimmer than the santoku, it is an exceptional general purpose chef's knife. It is perfect for slicing meats and proteins as well as chopping and dicing. Whether slicing onions, chopping vegetables, or portioning meats, this will be your go-to knife.
The 7-1/2 inch blade is hand forged 52100 carbon steel with a hand rubbed satin finish. Many makers and collectors feel that this is the best steel available anywhere for use as a knife blade. Like his hunting knives, this chef's knife was pre-tested for edge flex and cutting ability before assembly. The heat treatment followed the formulas developed by Bill Burke in conjunction with Mastersmith Ed Fowler. This technique, combined with Bill's choice of steel, creates some of the sharpest and most long lasting edges found anywhere. The spine and choil are nicely rounded to eliminate any hot spots for a more comfortable grip.
The bolster is fully integral to the blade. This technique has superior structural integrity and requires a particularly talented smith. The bolster is contoured to comfortably accommodate a pinch grip.
The handle is stabilized Hawaiian curly koa wood (Acacia koa). Koa is one of the most desirable exotic woods in the world. A black buffalo horn spacer nicely complements the exotic wood handle. Red fiber spacers help the natural materials adjust to humidity and temperature changes. The handle is nicely carved to swell at the palm, move into a slimmer waist and finally to swell again at end of the handle providing a comfortable, non-slip grip. This is a knife you won't want to put down! It is sure to become a kitchen favorite.
