Description: South African knifemaker David Hoehler specializes in chef's knives. Given that he worked in some of the best kitchens in South Africa for nine years, it is no surprise that he brings a unique understanding the chef's primary tool.
A utility knife is between a chef’s knife and a paring knife, with a narrower and straighter blade. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The 6-1/4 inch blade is high performing 14c28N stainless steel. This Sandvik stainless steel was specifically developed as a blade steel. It is a very fine grained alloy, ensuring a keen, long lasting edge. At Hrc 61, it offers a good combination of corrosion resistance, edge stability, wear resistance, and strength. The blade is meticulously flat ground for precise slicing and has a razor sharp edge. A hand rubbed satin finish lends an heirloom quality to the knife. The spine and choil are nicely rounded for comfort. The distal tapered blade provides perfect balance.br> The handle is dyed and stabilized maple burl. Two brass hidden bolt rivets set the scales to the full tang. This elegant knife will hold up exceptionally well to the demands of either a home or commercial kitchen. The front of the handle scales are sealed with a 304 stainless steel bolster to prevent food particles from getting into the tang. Like other knives, this knife should not be put in the dishwasher.
