Description: I was very excited when I was introduced to Dan Bidinger at 2019 Blade West in Portland, OR. Though Dan didn't have a table, his work spoke for itself. Bidinger brings a tremendous amount of skill, precision, and design to his knives.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The blade is well suited for slicing vegetables, meats, and more. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. At 7-2/3 inches, it is a perfect size for either the professional or home chef. This chef's knife combines ultra-high performance with the easy care of stainless steel. From chopping, to slicing, to mincing, this chef's knife will be your goto knife.
The blade is high performing AEB-L stainless steel. Many knifemakers and metallurgists feel that AEB-L, with its small crystalline size, tremendous edge stability and toughness, is among the best stainless steels used in knifemaking today. AEB-L was developed for razor blades with a very fine grain structure making it easy to sharpen while maintaining good edge holding capabilities. The thin flat grind provides a very efficient cutting geometry with good food release. The spine and choil are nicely rounded for a comfortable grip -- even after hours of use.
The handle is durable red paper Micarta with black paper Micarta liners. Micarta is created by stacking many layers of paper, soaked in resin and putting them under heat and pressure. The resulting material is among the strongest materials used to create high performance knives. The full tang and blade are distal tapered for optimal balance. The hand contoured, faceted handle is equally comfortable in a pinch grip or a standard grip. This is a knife you won't want to put down!
