Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, combined with his choice of steels, results in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
This high performance chef's knife is a perfect choice as a primary choice in the kitchen. The long, deep-bellied blade is well suited for slicing and chopping vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board.
Like his hunting knives, this chef's knife was pre-tested for edge flex and cutting ability. The heat treatment followed the formulas developed Burke in conjunction with Mastersmith Ed Fowler. This technique, combined with Bill's choice of steels, ensures some of the sharpest and most long lasting edges found anywhere. The blade is differentially heat treated, with in a soft, supportive spine and an extremely hard, long lasting cutting edge.
The blade is hand forged 52100 carbon steel and features a hand rubbed satin finish. 52100 is considered by many knifemakers and knife users to be among the best steels ever used for knives. Because this knife is made from carbon steel, we recommend using camellia oil to oil the blade and natural wood handle.
The handle is stabilized presentation grade curly koa (Acacia koa). Koa is widely considered to be the most beautiful of Hawaii's native hardwoods. The tight curl on this handle is particularly desirable. The handle is nicely contoured to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the beak at the end of the handle. The bolster is formed from 416 stainless steel, pinned and soldered to the blade for strength and durability. The knife is perfectly balanced and extremely comfortable to hold.
