Description: Andy Burke is the son of renowned Mastersmith Bill Burke. Over the years, Andy has had the opportunity work with Bill and he has created some truly spectacular knives. Andy makes a range of knives from kitchen knives to hunting knives, and folders.
The gyuto is modeled after the French pattern chef's knife. Longer and slimmer than the santoku, it is well suited to slicing and chopping -- it is an ideal general purpose chef's knife. This knife has a perfect shape for a rocking chop and is sure to be your goto knife.
The 7-1/2 inch damascus blade is forged from 1080 and 15n20 carbon steels. The firestorm pattern is high contrast and incredibly engaging. The spine and choil have been rounded for comfort. Andy's maker mark is shown on the left side of the blade. Because it is forged from carbon steels, we recommend using camellia oil to oil both the blade and natural wood handle.
The ambidextrous traditional Japanese style handle provides a sure, comfortable grip -- even when used for hours at a time. Macassar ebony is combined with a black paakawood to create a handle that will last a lifetime. A stainless steel spacer adds nice contrast. Like other knives, this knife should not be put in the dishwasher.
