Paring knives are a must-have for every kitchen. You can think of it as the mini version of the chef's knife because, like the chef's knife, the paring knife is quite versatile. The paring knife gets its name from its main function—removing or "paring" away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
The blade and full tang are formed from high performing AEB-L stainless steel. Many knifemakers and metallurgists feel that AEB-L, with its small crystalline size, tremendous edge stability and toughness, is among the best stainless steels used in knifemaking today. AEB-L was developed for razor blades with a very fine grain structure making it easy to sharpen while maintaining good edge holding capabilities. A cryogenic heat treatment ensures a especially keen, long lasting edge. The flat grind provides a very efficient cutting geometry.
The handle combines stabilized maple burl with macassar ebony bolsters. White vinyl spacers add contrast. A full tang ensures strength and durability. Brass fittings bring out warm tones in the natural wood. By using stabilized wood, Shires ensures this knife will hold up well to the demands of either a home or commercial kitchen. Like other kitchen knives, this knife should not be put in a dishwasher.
