Description: I was very excited when I was introduced to Dan Bidinger at 2019 Blade West in Portland, OR. Though Dan didn't have a table, his work spoke for itself. Bidinger brings a tremendous amount of skill, precision, and design to his knives.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing vegetables and meats. The gentle arch of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board. At 8-3/4 inches, it is a perfect size for either the professional or experienced home chef.
The blade is formed from high performing O1 carbon steel. O1 holds an exceptional edge and maintains great chip resistance. The thin convex grind provides a very efficient cutting geometry while adding food release. The spine and choil are nicely rounded for a comfortable grip. Because this knife is made from carbon steel, we recommend drying it off after use.
The contoured handle combines green canvas Micarta with bloodwood (Brosimum rubescens). The combination of the Micarta and the vivid South American hardwood is extremely engaging. The handle is beautifully shaped for a secure comfortable grip. This is a knife you won't want to put down.
