Description: Longer and slimmer than the santoku, the Gyuto is an exceptional general purpose chef's knife. The long blade is needed for the sawing motion required to cut meat and the slim profile keeps the weight low and the balance just right. Whether slicing onions, chopping vegetables, or portioning meats, this gyuto handmade by Ben Tendick is a perfect go-to knife in the kitchen.
This elegant Japanese-inspired chef's knife is Ben's sole authorship work. The blade is san mai construction. A V-Toku2 carbon steel core is surrounded by stainless steel -- combining the high performance of carbon steel with easier care. Takefu VToku2 carbon steel steel is tremendously high performing, with an extremely keen edge. The blade is beautifully thin for effortless, accurate slicing. Both the spine and curved choil are rounded for a comfortable grip. A K-tip provides a strong, detail oriented tip.
The ambidextrous handle is formed from maroon Micarta. Copper and carbon fiber pins set the scale to the full tang, ensuring strength and durability. The handle on this chef's knife is a nice size and will be very comfortable for extended use.
Like other knives, it should not be put in the dishwasher. Because the core is carbon steel, we recommend using camellia oil to protect the blade from rusting and the handle from drying out. This knife is sure to become your 'goto' knife and a family heirloom.
