Description: Swedish knifemaker Greger Forselius has a flair for design and a passion for making knives. This large chef's knife will be a kitchen favorite. The high performance knife will do a great job, whether slicing meats or chopping vegetables. At 2-1/4 inch, there's plenty height that it can easily be used with a rocking chop.
The blade was made from stainless damascus forged by Damasteel in Sweden. The spine is elegantly hand fileworked in a vine pattern. The blade was convex ground and heat treated to 60 Hrc by Greger. A convex grind assists food release, minimizing suction when slicing more delicate, moist foods. The blade shows off the bold ladder pattern damascus. Forselius designed this high performance knife to be tremendously light and nimble.
Spalted birch front and rear sections surround a stacked birchbark central section. Brass wire inlay adds nice contrast. By using stabilized woods, Forselius ensures the knife will hold up well to the high demands of either a home or commercial kitchen.
The knife is accompanied by a custom saya made from masur birch. The saya is a wood scabbard that provides a safe place to store and transport the knife.
