Description: Blair Todd, out of Gresham, Oregon, makes an amazing culinary knife. Todd has been a full time maker since 2014. He is quickly becoming well known for his high performance chef's knives.
You can think of a paring knife as a smaller version of a chef's knife because, like the chef's knife, the paring knife is quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
The blade is formed from AEB-L stainless steel. AEB-L is ultra high performance -- combining the convenience of stainless steel with the ability to take an acute edge and hold it (a characteristic usually only found in carbon steels). AEB-L steel was designed for razors, which need corrosion resistance, high hardness, and very acute edges. Once you try a knife that is made with AEB-L, you'll immediately understand why it is coveted by knife enthusiasts, knifemakers, and professional chefs. The resulting blade has an extremely keen, long-lasting edge. The blade is distal tapered for perfect balance and cutting efficiency.
Curly redwood scales are set on the full tang ensuring strength and durability. The light brown wood has a slight and elegant curl.
