Description: Handmade by Jim Arbuckle, this knife is an excellent piece for the chef that wants a knife that is as attractive as it is useful. One in the world.
Utility knives are perfect for slicing fruits, vegetables and meat, as well as performing other detail tasks. The thin blade is longer than a paring knife and has a thinner profile than a chef's knife. It is one of the essential knives to have in the kitchen.
It utilizes a very deep choil (cut-out) for the forefinger to rest in. This makes the knife easy to hold onto even with slippery hands. The blade is made from 154CM stainless steel and is given a hand-rubbed satin finish. A distal taper reduces weight and improved balance. It is hardened and double tempered to Rc 58-59 for excellent edge retention. The spine is nicely rounded for a comfortable grip and moves into a fileworked tang. The modified bamboo filework is filled with black epoxy, making it easy to keep clean. Osage orange wood grips are set on the full tang for strength and durability. A deep choil for the forefinger to rest in provides several different grip options and makes the knife easy to hold onto even with slippery hands. The grips are secured with epoxy and three nickel silver pins.
