Description: Journeyman Smith Erik Fritz has been working on chef's knife the last couple years and his latest knives have been amazing!
The 8 inch blade was hand forged from Erik's own West Texas Wind pattern damascus. The pattern is immediately engaging. By beginning with 1084 and 15N20 carbon steels, Erik ensures a keen, long lasting edge. The blade is nicely distal tapered for optimal balance. A differential heat treatment ensures a hard, long lasting cutting edge with strength and durability behind it. Because this knife is forged from carbon steels, we recommend using camellia oil to avoid rust and oxidation. This knife is perfectly balanced and is not one that you'll want to put down.
The handle is formed from Central American cocobolo wood. The warm toned wood has been nicely carved so as to swell at the palm, move into a slimmer waist, and swell again as it approaches the end. Cocobolo is a particularly resinous wood and holds up beautifully to the high demands of either a home or professional kitchen.
