Description: Jessica Burke is the 19 year old (as of the spring of 2016) daughter of Mastersmith Bill Burke. In the last couple of years, Jessica has begun making knives under the watchful supervision of her master smith father. The results have been absolutely amazing!
This high performance paring knife is a must-have for every kitchen. You can think of it as the mini version of the chef's knife because, like the chef's knife, the paring knife is quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
The blade was made from high performing AEB-L stainless steel. AEB-L is one of the few stainless steel that performs close to the level of the best carbon steel knives. When used in the kitchen, carbon steel knives will often have their edge deteriorate due to oxidation. High performing AEB-L is a perfect solution!
The handle is formed from presentation grade spalted maple. By using stabilized wood, Jessica ensures this knife will hold up well to the heavy demands of either a home or commercial kitchen. The handle is nicely carved to swell at the palm, move into a slimmer waist and finally to swell again at the beak at the end of the handle. The knife has perfect balance and this ensures it is as much of a joy to use as it is to look at!
