Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, results in edge holding that is far beyond other knives. This is a knife that will astonish you with its lightness, maneuverability and stunning good looks.
This high performance utility knife is perfect for slicing fruits, vegetables, and meats. The thin blade produces a very clean, even cut without bruising the food being sliced.
This blade was hand forged from 52100 carbon steel. A differential heat treatment line is clearly visible in the steel, showing the transition between very hard edge steel, and the soft, supportive spine. This combination ensures exceptional durability and strength. The heat treatment follows the formulas developed by Bill Burke in conjunction with Mastersmith Ed Fowler and creates some of the sharpest and most long lasting edges found anywhere.
The jet black handle is sculpted to swell toward the front of the handle, moving into a slimmer waist and finally to swelling again at the bird's beak. The knife has perfect balance and feels exceptional in the hand. A spacer formed from very rare muskox horn adds exceptional contrast.
