Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, combined with his choice of steel, results in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
This butcher's scimitar is designed to cleanly and confidently divide large cuts of meat, such as whole loins and shoulders, into smaller portions. The scimitar is a time-proven design, optimized for butchery that includes cutting steaks from large pieces of hanging meat. This is also the preferred knife for filleting large saltwater fish such as salmon. Similar pieces are often used on sport fishing boats and by employees of commercial fisheries (though perhaps not of this quality!). It is approximately 13-1/2 inches in length, and nearly two inches wide at the widest point. The main function of the curved tip is to give clearance and stop the point getting caught in whatever is being cut.
Like his hunting knives, this large scimitar was pre-tested for edge flex and cutting ability before assembly. A differential heat treatment is clearly visible in the differential hardness line approximately two thirds up the blade. This results in a soft, supportive spine and an extremely hard, long lasting edge. The bolster is formed from 416 stainless steel and has been TIG welded to the blade for strength and durability. The warm toned handle is formed from ironwood and is set with stainless steel pins. Despite being so large, this knife has perfect balance, ensuring it will be a joy to use!
