Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, combined with his choice of steel, results in edge holding that is far beyond other knives. This is a knife that will astonish you with its lightness, maneuverability and stunning good looks.
Petit gyuto hocho, meaning "small slicing knife", are great general purpose kitchen utility knives. The 5-3/4 inch, slender blade makes it very useful and versatile from slicing fruit to chopping garlic yet with enough belly to get serious work done. The thin blade produces a very clean, even cut without bruising the food being sliced.
Bill began the blade by forging a many layered stainless damascus from AEBL and 304 stainless steels. He then used the damascus to surround the 52100 carbon steel core. This was then forged to shape. The resulting blade is among the most captivating kitchen knives that I have ever seen. As well as being beautiful, the stainless damascus makes this knife a bit easier to care for.
Like his hunting knives, this utility knife was pre-tested for edge flex and cutting ability before assembly. The heat treatment follows the formula developed by Bill Burke in conjunction with Ed Fowler and creates some of the sharpest and most long lasting edges found anywhere.
The sheep horn handle scales are set on a distal tapered full tang, carved to swell at the front of the handle, move into a slimmer waist and finally to swell again at the beak at the end of the handle. Bill has chosen sheep horn for the unique property of it staying grippy, even in the wet. Some of the natural sheep horn texture has been left to aid this feature. The natural grain of the sheep horn complements Bill's damascus perfectly. The knife has perfect balance and is an utter joy to use.
