Description: Master Smith Henry Torres had the opportunity to work under renowned bladesmith Bill Burke in the spring of 2006. Their friendship has flourished since. This opportunity allowed him to best understand Bill's techniques of heat treating and implementation, which result in a level of edge holding rarely found elsewhere. Henry heat treated this blade using the same technique -- creating a differentially heat treated blade with a hard edge and softer, supportive spine. The result is exceptional.
Paring knives are a great choice for doing detail work in the kitchen -- from slicing garlic and shallots, to taking the eyes out of potatoes. The blade was hand forged from 52100 carbon steel -- a steel that many knifemakers and collectors feel to have the highest performance found anywhere. Stabilized maple burl scales have tremendous swirling grain. Mosaic pins complete the nicely contoured handle. Excellent fit and finish throughout.
