Description: Michael Rader, who was honored as a journeyman smith June 2006, is best known for creating dramatic swords and daggers with woodwork that is beyond compare. Recently, he put his attention to creating chef's knives. The results are exceptional.
Like his hunting knives, this chef's knife was pre-tested for edge flex and cutting ability before assembly. The nakiri is a traditional Japanese knife shape ideal for chopping fruit and vegetables. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to a meat cleaver.
The blade has been antiqued using Wayne Goddard's "mustard" protective finish. This attractive finish helps prevent rust and makes the knife easy to maintain. The bolster is integral -- a technique that, while common in production knives, is very rare in handmade knives due to the difficulty of implementation. The handle is formed from Hawaiian curly koa wood and has box elder burl accents. The wood has been stabilized so that it will hold up well under the rigorous demands of either a home or commercial kitchen. The knife has perfect balance and feels exceptional in the hand.
