Description: Mastersmith Joseph Szilaski's work is in a league of its own. His skills in metal working began as a teenager in Europe where he worked as a blacksmith's apprentice, making knives and cleavers for the local butchers. Over the years, he worked as an ornamental ironworker and in an art foundry creating details in the fine art and sculptures made there.
This high performance German style chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for chopping vegetables and slicing meats. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board.
The 8-1/2 inch blade is hand forged from 52100 carbon steel. Many knifemakers (such as Mastersmiths Bob Kramer, Bill Burke, and Ed Fowler) and users feel that 52100 carbon steel is among the highest performing steels used to make modern knives. A convex grind helps facilitate excellent food release. The spine and choil have been nicely rounded for comfort. Both the blade and tang are distal tapered for perfect balance.
The handle is carved from cocobolo wood that is hand fluted. Chamfering at the front of the handle accommodates a comfortable pinch grip. The handle is contoured to swell at the middle, move into a slimmer waist, swelling again at the back, ensuring a secure, comfortable grip. Like other knives, this knife should never be put in the dishwasher.
A cocobolo stand made by Szilaski matches the handle and accompanies the knife. This creates a beautiful display for the kitchen while keeping the knife always ready to be used.
